Vegans eat! Shocking, I know. There’s a lot of mystery surrounding veganism at times. It probably doesn’t help that we’re mysteriously never hungry because we ate before we came. So, I thought I’d share my weekly menu plan that helped us stop eating out and start saving.
I never wrote down a formal plan until our weekly menu-planning thread in Inclusive Vegan Cooking and Menu Planning. Not for lack of trying, I had just never really stuck to them before. What ended up working really well for me was making a quick template in my Keep app and updating it throughout the week, rather than sitting down and trying to think of everything all at once. By writing down things that sounded tasty and a link for reference as soon as I ran across them, it suddenly got much easier.
Menu planning also really helped cut down an already modest food budget and helped avoid eating out. Even fast food adds up! Food costs vary so much by region and family size that obviously I can’t promise anything, but we were easily able to save $200 a month without feeling like we were missing out on anything. In fact, food was more fun than ever, because I already had a “cheat sheet” of everything that sounded good and that I knew I had the ingredients for, so there was no longer any staring at the fridge and pantry willing meals to life.
My kitchen robots help a ton too. I especially appreciate my Instant Pot, bread machine―this stainless steel convection model was actually my husband’s Valentine’s Day present—and the food processor portion of my 1500 watt Ninja. Obviously you don’t need them, but if you have them in your garage collecting dust, I highly recommend breaking them out.
