Easy Cheddar Broccoli Soup

Easy Cheddar Broccoli Soup without any cheese, who knew it could be done? This easy vegan soup comes together in a snap with my Instant Pot. You can certainly boil on the stove top until soft if you prefer! I use lactic acid for tang, but you can certainly use apple cider vinegar or lemon juice. A bit of miso wouldn’t hurt either! It’s a very flexible recipe. I made this again today without a steamer basket in my Instant Pot and found it was a little thin. If this happens, you can add some instant mashed potatoes or tapioca starch to thicken it up. It’s a great introduction to soy curls as well and I have served it to non-vegans with great success. It’s a fantastic make-ahead option for those with children as well. Enjoy!

Easy Cheddar Broccoli Soup

Course Soup

Ingredients

Soup Base

  • 1 small yellow onion
  • 4 carrots
  • 4 golden potatoes
  • veggie stock

Chickeny Soy Curls & Broccoli

  • 2 cups soy curls
  • 4 cups vegetable stock
  • dash poultry seasoning
  • paprika
  • dash turmeric
  • fresh pepper to taste
  • 1/4 tsp iodized salt
  • 1 tsp sugar to cut bitterness
  • 10 oz broccoli florets
  • canola oil to crisp in the pan

Soup Seasonings

  • 1/2 c canola oil
  • 2 tsp lactic acid
  • 1 tbsp iodized salt
  • garlic powder
  • paprika
  • turmeric
  • mustard powder

Instructions

  1. First steam or boil a small yellow onion, four carrots, & four golden potatoes. I used a steam basket in my instant pot for three minutes with a natural pressure release, but however you'd like to get them nice and soft will do.

  2. Then I popped them in my high speed blender to cool a little with some veggie stock out of the fridge. Leave a vent open.

  3. In the meantime, soak 2 cups of soy curls with 4 cups of boiling vegetable stock & some chickeny spices. Bouillon is fine, but I've included my favorites.

  4. Steam broccoli. Microwave is fine. 

  5. Throw the soy curls and steamed broccoli into a hot, oiled cast iron skillet to get some char going, 

  6. Blend the veggies until smooth with about 1/2 c canola oil, 2 tsp lactic acid, 1 tbsp iodized salt, garlic powder, paprika, turmeric, and mustard.

  7. Top with broccoli & soy curl mixture to serve.

Recipe Notes

Store soup base and topping separately so soy curls don't get mushy.
