Vegan Tuna Salad with Chickpeas

Vegan tuna salad is one of my favorite things to make for guests. They’re always pleasantly surprised how similar it is, especially if I add kelp flakes. Tuna salad was a staple in our house growing up, and this Italian version always came out for picnics with a bottle of red wine vinaigrette dressing and a bunch of crusty French bread. It’s especially nice to make ahead for the week for an easy grab and go lunch.

Vegan Tuna Salad

Ingredients

  • 2 cups chickpeas mashed
  • 1/4 red onion sliced
  • 2 roma tomatoes diced
  • 1/2 bunch Italian parsley chopped

Dressing

  • 1 tbsp flax oil
  • 3 tbsp red wine vinegar
  • 1/4 tsp salt
  • 1 tsp fresh black pepper
  • 1 tsp garlic powder

Instructions

  1. Mix it all together and serve with crackers as a dip or on nice, crusty bread.
